Mavene Bennett has a degree in psychology. She thinks that Fifi was responding to my "Stage Mom" stress energy. So her recommendation is to put that doggie right back on that horse. There is a pet show event in a neighboring community in September. Mavene says that if I low-key it and simplify my designs Fifi and I might be just fine.
I think I'll go with an Amish theme. No pompoms or doodads that she can chow down on and she'll be adorable in a sun bonnet or prayer kapp! I could maybe even do a tiny Amish quilt that could drape over one side. I feel better already.
And now that Fifi has processed the pompoms I think she's back to normal, too.

Buffalo Potato Salad. Yes. Really!
Now my measurements are going to need to be tweaked to your taste level. I apologize for doing a Fern but I was inspired and going rogue in the kitchen. With such delicious results! So good. So easy.
I boiled 6 potatoes. And hardboiled 4 eggs.
Let them cool. Peel the eggs, dice eggs and potatoes into a bowl. Add tiny diced celery (three good sized ribs) Add chopped green onions. The green section from a bunch or about 10 if you grow your own. And fresh chopped parsley to taste. (I used about 1/2 cup.) Mix this all together.
In a smaller bowl add about 3/4ish bottle of ranch dressing (the normal sized 16 ounce bottle, I used Ken's) and add 1/8 cup of Frank's Red Hot. Mix well and taste. You want the Frank's to slightly take the edge off the ranch and leave a nice afterburn. Too little and the ranch overpowers the spice, too much and your guests will be whining like little babies. Add either ranch or Frank's to get it where you want it. Then dump it over the veggies and stir well until it looks like a light orange dream. You can make it the night before even. Easy-peasy-delicious!!!!!!

Bittersweet
I will not blather on about my disappointment over the 4th's parade.
Fifi had a snit. I don't know if the outfits were too much, or that she was around too many strangers. She growled at a judge. She refused to prance so the feathers danced. Then she literally ate two pompoms right off the most visible part of the finale gown. Of course, she didn't win. She didn't even get an honorable mention. It's so bad between us that Fern is even trying to smooth things over. Fifi has been sleeping on the couch. I'll forgive Fifi. But I just can't see us ever trying a pageant style event ever again.
Fortunately, even though the pooch took a little doodie on my dreams, there was something good that came out of the 4th.
I made a cake. Now. That's not unusual. But this year, because I had an epic sewing responsibility, ahem, I didn't focus on my desserts as I usually do. In an attempt to simplify I was able to make something grand and easy.
I'll call it Patriotic Poke Cake
I made my award winning white cake. Those of you who do not have an award winning white cake, feel free to use a white cake mix, follow the directions for a 9 x 13 cake and bake it.
When it cools poke a bunch of holes. Many, many holes. Use a handle from a wooden spoon or skewer.
Take a jar of home canned blueberry jam or preserves and microwave it for about 30 seconds. Poor over the cake or every other hole if you like. Do the same with a jar of strawberry preserves. (If you don't can your own, well then, simply use store bought jams and you can use the frozen tubs of sweetened strawberries from the freezer case if you'd rather instead of strawberry preserves). Layer the strawberry jam over the blueberry or fill alternate holes. Use the whole jars.
Let set up in the fridge for a few minutes. While cooling then whip up homemade vanilla whipped cream. Of course, since we are going for easy vs award winning (which seems to be the theme of the day, right Fifi?) use the fake whip in the freezer case. Spread over the top of the cake until the cake is covered with white fluff. If you want to get really fancy you can place fresh fruit in whatever floats your boat across the top of the cake. This tastes like strawberry shortcake with less fuss and bother.
Boom! Done!

Melt together.
Add 4 cups rice krispy cereal.
Drop and press into greased muffin tins. Sprinkle the top with crushed candy bars or mini m&m's and press with the back of a spoon. Pop into fridge. Makes 18-24. It's like a crackle bar or nestles bar on steroids. (And not the ones to help you breathe or lessen your arthritis pain. Ha. Ha. A little retirement park humor!)
Pop them out when solid. Place in a container. Keep in the fridge so you don't have melty hot messes. Enjoy.

Now here we go! To the other good stuff! I'm the best at scratch cooking. Not tooting my own horn, I'm just stating the facts. One day I might have to share testimonials to this fact. I have a notebook full of statements, comments and a blue ribbon from every state fair I've ever entered!
But being a good cook means choosing your battles. I have to decide if I want to spend my time and energy on creativity or chopping things. Now. I love the feeling of chopping. It's a very satisfying stress reliever (especially with Fern around...I do so much chopping therapy) and the released scents can be just heavenly. But I will use a food processor like nobody's business if one will be a useful tool and free me up to be creative!
That said I am not opposed to dump and go type meals. Soups are one of these.

Today I share my minestrone style soup. Using fresh, frozen or canned ingredients you can make a restaurant quality soup. Delicious!
To cut down on sodium use home prepped dry beans, a homemade pesto and frozen or fresh veggies.
1 can of kidney beans (approx 15 ounce) (dump the juices down the sink, rinse and drain)
1 can of white or great northern beans (approx 15 ounce) (dump the juice down the sink, rinse and drain) (use your own home canned beans 1 and 3/4 cups if you like)
2 cans of diced tomatoes with garlic, basil and oregano (approx 15 ounce each) (you could substitute chunky spaghetti sauce here.) (Or chopped fresh or canned tomatoes and add dried Italian spice (about a TBSP) and 2 - 3 cloves minced garlic)
Veggie broth (or chicken) (approx 4-5 cups)
1 Cup of pesto sauce (you can use one that you've created, your favorite recipe, or store bought)
1 Can of chopped spinach or 1 1/2 cups chopped frozen or fresh.
1 Can (13-16 ounce) vegetable of choice. I used asparagus for kicks. I think I will use artichoke hearts in the future or green beans.
1 Cup pasta of choice.
A Handful of quinoa Rinse it first if it's not prewashed. The package will say so.
Put everything but the pasta in a crock or soup pot and stir well. Simmer for 4-6 hours. Add the dry pasta an hour before serving. Stir well and continue simmering.

Just Getting Right To It. Applesauce Cake by Fern
Zula makes an applesauce cake that needed just a bit of tweaking to make it healthier. So here it is. Fernified.
2 Cups flour
1 Cup oatmeal
1/2 tsp salt
2 teaspoons cinnamon
2 teaspoons baking powder
3/4 Cup sugar
2/3 Cup melted coconut oil
2 eggs or 2 Fern eggs (2 TBSP ground flax combined with 6 TBSP milk = 2 eggs)
1 teaspoon lemon juice
1 1/2 Cups applesauce
1 teaspoon vanilla
1 Cup chopped walnuts or pecans.
Preheat the oven to 350. Grease a pan or pans.
Mix the dry ingredients in a bowl including nuts. Make the Fern eggs in a medium bowl, add the remainder of the wet ingredients. If the coconut oil hardens because of the milk just stick the bowl in the preheating oven for a minute or zap in the microwave for a few seconds. Pour the dry into the wet or wet into the dry and stir just until combined. Pour into two greased cake pans or a greased 9 x 13. Bake approximately 20 minutes. Test for doneness with a knife. There should be moist crumbs. Remove from oven. You could probably make this a bundt cake and bake for 35 minutes. That's according to Zula.
In a small bowl mix applesauce and powdered sugar until you get a glaze the consistency of what you want. Approximately 1 cup sugar to 1/4 cup applesauce. Add a dash of cinnamon if you desire. Drizzle the glaze over the cooled cake.
What I changed: decreased oil and sugar amounts, omegas and fiber with the flaxseed.

Zula's Siren Cinnamon Muffins

Zula’s Siren Cinnamon Muffins

I love to cook, so getting into character for my latest co-authored release, Out of the Frying Pan, was particularly fun.
Main character Zula Hopkins is renowned for her sweet culinary skills at the Sunset Paradise Retirement Community. These muffins are her go-to recipe for attracting male suitors—and it’s the first thing she whips up to garner the attention of Detective Jared Flynn for her niece KC. Here’s the recipe . . .
Siren Cinnamon Muffins
2 cups flour
¾ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
pinch of salt
¾ cup buttermilk
¼ cup melted butter
1 teaspoon vanilla
1 teaspoon cinnamon
1 large egg
8 ounces sour cream
2/3 cup cinnamon chips
Streusel: 1 package instant cinnamon oatmeal
- Preheat oven to 375 and grease your muffin tins.
- Combine flour, sugar, baking powder, soda, and salt in a bowl. Make a well in center of mixture.
- Dump the rest of the ingredients (except for the instant oatmeal) into the well and stir until mixed. The batter will be rather thick.
- Fill muffin tins 2/3 full then sprinkle the instant oatmeal over the top.
- Bake at 375 for 18 minutes.
I’m not going to lie. These bad boys are slightly addicting. This recipe makes about 15 muffins so you’ll probably want to double it because they are some kind of good!
Here’s some food for your soul as well . . . One of my favorite Bible verses is Nahum 1:7.

Muffins and God’s Word . . . it doesn’t get much better than that.

Bananas, Bananas B-A-N-A-N-A-S
Just in case you haven't made this cake. And you've got bananas just crying out to be saved from their frozen brown sticky state or limp, lackluster existence on your counter, you really must make this cake. If you are out of bananas or a banana hater you can use pumpkin.
I made it again the other day and not one crumb remained. And this little moist beauty sat right next to one of June Findlay's peach pies. The cake went first. I need a blue ribbon, please. Is that the highest award? Why do I think purple is better? Is it? Then I need a purple ribbon. No. Let's just make that a rainbow of ribbons. This cake deserves a rainbow.
Fern was all atwitter because I made it her way again with the flaxseed and such.
(Speaking of Fern. I'm not supposed to mention this. I was actually forcefully FORBIDDEN! But I don't expect her to read this. She mentioned my comments were drivel one day when talking about the Paradise Paragraphs newsletter I edit.

Anyhoo...she's going on date number 2 tomorrow. Hmmmm maybe I should start concocting wedding canapés. I could do it right under her nose since we are hoping that Kathryn and the detective start humming "Here Comes the Bride!" Ooooh! That gives me an idea!)

Banana Cake with Cream Cheese Frosting
Makes one deep sheet cake. Or a shallow sheet cake and 8 x 11 if you want a thinner cake and more of it. Or a 9 x 13 plus an 8 x 8. Or good grief, cupcakes. About 40 of them. Heat your oven to 350. Grease and flour a jelly roll pan. Or pans. Or fill your muffin tins with paper liners.
Cake
¾ Cup coconut oil (You may use butter if y’all think that’s better. I will say Fern's suggestion of coconut oil did add a different and tasty spin on this cake.)
3 Cups flour or whole wheat pastry flour
1 Cup water
½ Cup milk (¼ cup if using eggs instead of ground flaxseed)
2 TBSP ground flax seed (or 2 eggs and decrease milk amount as noted above)
2 Cups sugar
1 teaspoon slightly mounded baking soda
1 ½ teaspoons vanilla
1 ½ Cup or 4 ripe mashed bananas (or 1 1/2 Cup pumpkin puree)
Pinch of salt
1 teaspoon cinnamon
Optional but recommended: 1-2 Cups chopped pecans or walnuts
Place the water, coconut oil (or butter) and milk into a saucepan. Bring to boil then remove from heat.
Place every other ingredient into a large mixing bowl where you have smashed the bananas. Pour the hot liquid over the other ingredients and mix very well.
Pour and spread into the prepared pan(s). Test the cake at 20 minutes. A toothpick or knife should come out clean or with wet crumbs. If wet give it an additional 5 minutes and test again. And repeat.
Frosting
½ package cream cheese (4 ounces)
4 Cups powdered sugar
dash of vanilla
1-2 TBSP milk, added 1 TBSP at a time.
Mix it to the consistency you want. I made mine pretty thick.
Spread over the cooled cake. Serves at least 20 people.

OOOOhhhh Moonstruck!
I missed the Super Moon.
I didn't miss it, miss it. But Bobbykins was out of town for a few days. And when he returned to Paradise he was laid up with back issues. Those long car trips are rough on him.
While others were gazing into each others' eyes and whispering sweet nothings including proposals of marriage while the huge moon crept out of the horizon and into the sky I was serving chicken noodle soup and changing out ice packs. I did make this recipe. You have to go to the lady's blog to get it. One of the writer sent it in and FORGOT to tell everyone that it's my recipe. Oh. They have a book giveaway, too.
Anyhoo!!!! I pointed the moon out once or five times to Bob. Even suggested we try to sit outside for a bit. He grunted. I'm sure there was love and maybe a little awe in those grunts, but that's all I got.
So I had to live vicariously through pictures.
Have you seen some of them? Ooooh baby, that was one huge moon.
While looking at pictures I found out some facts, too. (Don't worry, even though I saw it on Facebook I'm sure it's accurate. They said it came from Scientific American.)
Dogs are more likely to end up in the emergency room. I hugged Fifi extra tight after reading that fact. Shudder. I had her out and about with me, coming and going. The little thing probably has post dramatic stress issues because of the whole murder fiasco and near death of her mommies. Oh, gracious. I'm so glad I missed this fact before the moon or I would have had her on lock down, behind Fern's closed door where there is literally nothing she could hurt herself with. Fern has a desk and a bedside table and nothing on the walls. Or surfaces. It's worse than a hotel. At least hotels have colors. Not Fern. Fifi would have definitely gotten post dramatic distress from that.
One of the other facts. Plants grow better during full moons. Woot! Woot! The garden club meets in my garden the day after tomorrow. That means I'm going to be full flower. So I can still claim something wonderful from that big old moon.
Gotta go take care of the Bobbis. He's feeling better but still needs a little TLC. And I like to call it ZLC cuz with Zula on the move Loving Care is off the charts. Full super moon TLC. Now just to freshen up and sprinkle that extra cinnamon love on those muffins. The man is going to be moonstruck without the benefit of Super Moon.

Whew! Here We go Again
I think that title sounded cranky. Well, Fern just said it did, I'm pretty sure it didn't but if I don't type this now she's going to pester me until I do.
Housekeeping issue resolved.

Banana Cake A Cure for the Boos...
The writers have another busy month in November. Which means I'll probably be required to post a few extra times. Today is Halloween. We don't get many trick or treaters anymore. All those Trunk or Treat and the malls are all the rage now. Some of those costumes are scary! Have you seen some of them? And people buy them for little kids. Sweet mercy. I can't imagine the sugar overload and the terror filled nightmares.
I would share my famous candy bar cookies today. But that would be too predictable for Halloween.
I will share this recipe though.
Also a hint. Did you know that if you peel old bananas and toss them into a plastic bag in your freezer you have a much easier time of getting the banana where you want it to go rather than all over you. I'm shocked at how many home chefs just shove whole bananas in the freezer. Ugh. Then you have the slime, the black and greasy peel and the strings. Oh, that's almost enough to give me a nightmare! Trust me. Peel the banana first and toss it into a gallon sized banana bag. You'll thank me. You know you will!

Banana Cake (Slightly healthified by Fern but with non-hippie options still available for those of you who wouldn't know flax from a flea.)
Makes one sheet cake. Heat your oven to 350. Grease and flour a jelly roll pan.
Cake
¾ Cup coconut oil (You may use butter if y’all think that’s better. I will say Fern's suggestion of coconut oil did add a different and tasty spin on this cake. Trust me she tells everyone that she converted me. Yeah, whatever, Fern, whatever.)
3 Cups whole wheat pastry flour (whole wheat flour that is decimated into a much finer flour. Whole wheat traditional would give you much denser result. All purpose would work as well. Or give old fashioned oats whirled into flour a try. Fern fix. She just has to meddle in everything, I swear.)
1 Cup water
½ Cup milk (¼ cup if using eggs instead of ground flaxseed)
2 TBSP ground flax seed (or 2 eggs and decrease milk amount as noted above)
2 Cups sugar
1 teaspoon slightly mounded baking soda
1 ½ teaspoons vanilla
1 ½ Cup or 4 ripe mashed bananas
Pinch of salt
Optional but highly recommended!!!:
1 teaspoon cinnamon
1-2 Cups chopped pecans or walnuts
Place the water, coconut oil (or butter) and milk into a saucepan. Bring to boil then remove from heat.
Place every other ingredient into a large mixing bowl where you have smashed the bananas. Pour the hot liquid over the other ingredients and mix very well.
Pour and spread into the prepared pan. Test the cake at 20 minutes. A toothpick or knife should come out clean or with wet crumbs.
Frosting
½ package cream cheese (4 ounces)
4 Cups powdered sugar
dash of vanilla
1-2 TBSP milk, added 1 TBSP at a time.
Mix it to the consistency you want. I made mine pretty thick.
Spread over the cooled cake. Serves at least 20 people.
I hope you survive Halloween. Watch out for clowns. Fern and I are staying in tonight for sure. I'm still healing and just can't abide by a scare. Mabel said she she saw a clown in the wooded area by the parking lot. Sweet mercy. I'm hoping it was Ralph who actually is a clown and that he'd just come from a birthday party. Ralph is a little strange though. Oh goodness. I've gotta go, I need to lock my doors!

Another Recipe ~ Oh, You Want THIS!
The writers are quiet. One has moved off to promote another story. Her characters aren't quite up to having their own blog if that says anything. And I think it does. Granted, those characters are historical so the world webs weren't around then, but that's beside the point.
I am quite capable of stepping outside the book covers and moving and shaking. Shake what your mama gave you, folks. That's my motto.
While you are shaking you might as well be baking. Not baking per say, because these are no bake treats. But I think you get the drift.
These are totally season appropriate which is why I'm going to share them now.
Saltysweet Sensations (try singing it, very lyrical)
3 TBSP coconut oil
3 TBSP peanut butter (creamy, crunchy, whichever you have is good)
1 package marshmallows (10 ounce)
4 Cups krispy or flaky cereal
1 Cup dry roasted peanuts
1 Cup candy corn
*Optional - 1 Cup chocolate chips or candy coated chocolate pieces should you need a chocolate fix. Note that the color of your treat will change unless you wait until they are cooled. I left the chocolate out this time. Peanutty delicious. Also if you leave out the chocolate you can share with your four-legged bestie. Fifi danced and whirled for a morsel of these.

Update on Our Story...And A Recipe!!!!!
The writers are blah-blah-blahhing over here http://bit.ly/2dVDvuY. They talk about how they invented us and took us through danger for their enjoyment. Yeah. "Whatever" as the kids say.
Since I'm just a figment of someone's or someones' imaginations I will just go on and head to the kitchen now.

German Chocolate Krispy Bars
3 TBSP coconut oil
3 TBSP butter (note, you can do 6 TBSP of either one, I like the mix though for additional flavor goodness)
1 10 ounce bag of marshmallows
1 teaspoon vanilla
¼ teaspoon salt (this helps cut the uber sweetness and adds dimension)
1 Cup toasted coconut *

¼ teaspoon salt (this helps cut the uber sweetness and adds dimension)
1 Cup toasted coconut *
1 Cup toasted pecans *
1 Cup chocolate chips
4 Cups (roughly) of crispy rice cereal.
Melt butter/coconut oil over flame in a large saucepan. Turn down heat, pour in marshmallows, stir until they begin to melt. Remove from heat and keep stirring until they are fully melted. Add salt if using and vanilla. Stir well. Pour in cereal and add-ins.
Press your mixture into the greased 9 x 13 (or 8 x 8) pan, wait til they cool and cut and devour.
*Toasting coconut and pecans. Cover a baking sheet with a cup of coconut and chopped pecans and toast 3-4 minutes at 350. Stir. Put back into the oven for 5 more minutes. Watch carefully the last minute so the coconut doesn't get darker than golden brown.

Party! Party! Party!
The writers had a party!
They served mocktails and little bites of deliciousness!!!! And the food items were my recipes. (Well, apparently one had to be tweaked a bit! But that's because they don't have my awesome bundt pan!)


The writers held this party in a cute book shop in Minneapolis, and the shop was set up for partying like nobody's business. The store name is adorable...wait for it....ONCE UPON A CRIME!!! Isn't that CUTE???
When the writers walked in it looked like a book store full of racks and shelves of books. They had a moment where they wondered where would they put the bodacious spread they had prepared from MY RECIPES!?!?! And the mocktail table? And the book signing table?
Oh those clever book store people! Racks on wheels. They just swooped in and turned the whole room into a book-lined PARTY ROOM!!!!! The writers even shared the Paradise Paragraphs newsletter with the CROWD. It was a huge CROWD. Here are some pictures.
I'm going to be putting wheels on all my living and dining room furniture. Fern will be helping. Or maybe if I offer Salmon Roberto and Spicy Dicey Onion Rings Bobby-Boo will help. Darn. I may have to see if I can't rope in Detective Flynn. He's got a nice strong back and I am his favorite senior citizen of all time.
But I just LOVE the wheeling idea. I could redecorate weekly. We can have dance parties after dinner. It's brilliant! BRILLIANT! Oh, and here's another interview. I'm not sure I like what was said about me, but speaking of favorite senior citizens I think I loved that part.
